- 3 egg yolks
- 1 whole egg
- 1 ½ cup of half and half
- 1 ½ cup of flour
- 2 tablespoons of sugar
- 1 teaspoon vanilla
- ½ teaspoon of freshly ground nutmeg
- 6 teaspoons of baking powder
- Pinch of sea salt
Bourbon-Maple Syrup
- ½ cup of real maple syrup
- ½ shot of bourbon (more depending on your relatives)
1. Add the three egg yolks and a whole egg to a small mixing bowl and beat them until they whiten and become somewhat stiff.
2. Add the half and half, sugar, vanilla and nutmeg and mix well.
3. In a large mixing bowl add the flour, baking powder and salt.
4. Add the wet ingredients to dry, mixing well.
5. Heat the skillet until a drop of water dances on the surface, the coat with butter or a non-stick cooking spray.
6. Ladle some batter onto the pan and flip with spatula when bubbles start to form and they get dry around the edge.
7. Add the maple syrup and the bourbon to a small sauce pot and warm the mixture over a low heat.
(Do not step on your scale for a least 2-3 days.)

Now that would have been good on Christmas morning. I can't decide now whether I'm sorry I didn't see this before then, or glad. 
Of course, I have printed it out and put it in my recipe notebook because it sounds amazing, and I don't know why I've never thought of putting bourbon in maple syrup. This sounds like a great dinner to me! I love breakfast for dinner.

Good thing I do not have scale in the house. 
I like pancakes a lot although I just eat some of it on a very rare times. That pancake recipe really sounds delicious.
