Lime Recipes?

I've been having a crappy few days so DH and I decided to do a bakeathon and try to make inroads into the crate full of limes we have in the kitchen*.We made 2 large and one small lime pie (Nigella's key lime pie recipe), some lime bars (shortbread type base topped with creamy lime layer) and some chilli-lime brownies. We've used up about half the limes in the crate and will be taking loads of bribes into our respective offices tomorrow. If it stays here I'll just eat it all then feel guilty about eating it all and so it goes... :rolleyes:

Now we just need to figure out what to do with the rest of the limes....any suggestions that use LOADS of eggs would be greatly appreciated!

Lime cheesecake!
Pineapple and lime muffins and cupcakes! (I don't have a specific recipe - I just use a basic recipes and add fruits)

You could also make things that will keep that you won't be tempted to eat, like salad dressings with lime, fruit salsa with lime (would be so good with chicken or pork chops) and limeade syrup you can freeze to make pitchers or limeade whenever you want.

I especially love lime with meat - but then I'm a huge fruit with meat fan.

Don't forget to zest the limes and candy the zest with sugar. It'll keep and be fantastic flavoring for baked goods for months.

Thanks I'll try those. I have this wierd thing (DH calls it my psychosis) that I always have to have the ingredients to make pretty much anything that might catch my fancy at any time using just ingredients from my store cupboards. haha

(when it came out, I had to explain to a usually smart friend that putting the "lime in the coconut"
was the issue, but the doctor said to drink more. He finally got it. Duh.) :laugh:

Cooks Magazine has a killer Key Lime pie recipe.  I use regular limes and it's great!  Dang, my mouth is watering again! :biggrin:

You could always make up some curry sauce with some of the limes, and freeze it for future use. Our favourite recipe is to soften some onions in oil, then add a couple of chopped garlic cloves and a rounded dessertspoonful of your favourite curry powder. Cook for a few minutes, then add the juice and zest of a lime, a rounded dessertspoonful of mango chutney and a 400g can of chopped tomatoes. Cook for about an hour in a covered pan, keeping at a slow simmer rather than allowing to boil.

When you want to make a curry, sear the meat in a pan, add the defrosted curry sauce and cook either on the hob or in the oven until the meat is tender and the flavours are blended. This works well with chicken, beef, lamb or vegetables.
